Grieve's classic 'A Modern Herbal': 'The uses of Parsley are many and are by no means restricted to the culinary sphere.
The most familiar employment of the leaves in their fresh state is, of course, finely-chopped, as a flavouring to sauces, soups, stuffings, rissoles, minces, etc., and also sprinkled over vegetables or salads.
The leaves are extensively cultivated, not only for sending to market fresh, but also for the purpose of being dried and powdered as a culinary flavouring in winter, when only a limited supply of fresh Parsley is obtainable.

American Materia Medica, 1919 (Ellingwood):
'An infusion of parsley is beneficial when, with nephritis or cystitis, the specific gravity of the urine is high, and the urination painful and irritating to the mucous membranes.
It is useful in gonorrhea and strangury, with great irritation of the parts, with heat, or a scalding sensation on passage of urine, and can be given during the inflammatory stage. |

'Medicinally, the two-year-old roots are employed, also the leaves, dried, for making Parsley Tea, and the seeds, for the extraction of an oil called Apiol, which is of considerable curative value.'
The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends 'Parsley, consisting of the fresh or dried plant' for 'flushing out the efferent urinary tract in disorders of the same and in prevention and treatment of kidney gravel.' |

Parsley
Parsley, or Garden Parsley for precision (Petroselinum crispum) is a species of Petroselinum in the family Apiaceae, native to the central Mediterranean region (Iran, southern Italy, Algeria and Tunisia), naturalised elsewhere in Europe, and widely cultivated as a herb, a spice and a vegetable.
Medicinal uses
- Parsley tea may be used as an enema.
- Chinese and German herbologists recommend parsley tea to help control high blood pressure.
- It is often used as an emmenagogue.
- Parsley also appears to increase diuresis by inhibiting the Na+/K+-ATPase pump in the kidney, thereby enhancing sodium and water excretion while increasing potassium re absorption. It is also valued as an aquaretic.
- When crushed and rubbed on the skin, parsley is said to reduce itching of mosquito bites.
- It is commonly believedthat when chewed, parsley can freshen bad breath, especially from eating garlic. However, some people regard this as a myth; it is no more effective than chewing any other substance (such as chewing gum).
- The essential oil apiole found in all parts of parsley are a proven kidney stimulant.
- Parsley appears to enhance the body's absorption of manganese, which is important to help build bone. The absorption appears to be especially enhanced when parsley is eaten in conjunction with copper and zinc rich foods such as shellfish and whole grains.

Health risks
- Parsley should not be consumed in excess by pregnant women. It is safe in normal food quantities, but large amounts can have uterotonic effects.
- Parsley contains small amounts of oxalic acid, capable of causing kidney stones, though the exact quantities are disputed.
- Parsley seeds contain a high level of apiole oil and are a diuretic.

Parsley
Parsley Herb is a natural source of carotene (provitamin A), vitamins B1, B2 and C, iron and minerals and may be used to aid digestion, relieve gas, water retention, stomach and intestinal upset, rheumatism and gout, high blood pressure, painful menstruation, enuresis (bed-wetting), kidney stones, gallstones, sciatica, swollen glands, and to freshen breath.
